Counter service, from cafes to quick-service counters, combines the slip risk of a wet service area with burns from hot beverages and equipment, the repetitive strain of fast standing work, and the pressure of a customer-facing queue. The injuries are frequent and mostly preventable through floor traction, burn control, and workstation design.

The risk profile

Behind a service counter, the floor and the heat are the recurring hazards. Spilled drinks, ice, and cleaning water make the service area slippery, and staff move quickly through a tight space, so same-level falls are the most common injury. Hot beverages, steam wands, and heated equipment cause scald and contact burns, especially during a rush when the pace tempts shortcuts.

The rest of the load is repetition and pressure. Standing through the shift, reaching and turning to make and serve orders, and repeating the same motions builds fatigue and strain, which workstation layout and anti-fatigue matting ease. The customer-facing queue adds time pressure and, at times, difficult interactions, so the job carries a real stress and de-escalation element. The practical program keeps the floor dry and slip-resistant, controls the burn hazards, and designs the counter and the pace so speed does not come at the cost of safety.

Spilled drinks, ice, and cleaning water make the area behind the counter slippery, and staff move fast in a tight space. Same-level falls are the most frequent counter-service injury.

  • Specify slip-resistant flooring measured against the wet DCOF threshold
  • Use mats at wet points and clean spills immediately
  • Design drainage and keep the service area uncluttered

Scald, steam, and contact burns

Hot beverages, steam wands, and heated equipment cause scald and contact burns, most often during a rush. Handling hot liquids at speed is the common mechanism.

Cuts from blades and glassware

Slicing blades, grinders, and broken glassware cause cuts during preparation and cleanup. These are frequent, lower-severity injuries.

  • Handle and dispose of broken glass with tools, not hands
  • Use cut-resistant gloves for blade cleaning
  • Keep blades maintained and stored safely

Floor traction and housekeeping

Slip-resistant flooring, mats at wet points, and immediate spill cleanup keep the service area from becoming a fall hazard. Footwear and matting are chosen against the actual floor condition.

Burn prevention

Equipment layout, insulated containers, and pacing that does not force unsafe handling reduce scald and contact burns. The rush is exactly when the burns happen, so the design has to hold up under pressure.

Workstation and pace design

Counter layout, matting, and item placement reduce the standing and reaching load, and realistic pacing keeps speed from driving injuries. Customer-facing stress is supported with de-escalation training.
